From the creators of The Lazy Butcher and Cowboy Lounge, we’re preserving the history, honoring Dave Rodriguez, and bringing Black Hat back with steaks, seafood, spirits, warm hospitality, and a few new reasons to gather in the foothills.

With deep humility and gratitude, we are honored to take over operations at Black Hat Cattle Co. and continue a tradition that has been part of this mountain community for decades.

This transition has been in the works for some time, and we are incredibly grateful that Dave Rodriguez chose us to carry forward a concept he poured his heart and soul into.

For decades, this building has been home to a steakhouse and a place where friends, families, and neighbors gather. We are proud to preserve that history while thoughtfully bringing the next chapter of Black Hat to life.
