Heritage Hall event catering is executed in-house by the Black Hat Cattle Co. kitchen team. No outside caterers, no off-site prep — every dish on your menu is made here, in the same kitchen that runs nightly dinner service.
Steaks, seafood & seasonal cooking
The same kitchen behind Black Hat's dinner service prepares every Heritage Hall event menu. Dry-aged steaks, fresh Colorado-sourced seafood, house-made sauces, and seasonal vegetables — all executed to the same standards as nightly service.

Every Heritage Hall catering engagement starts with a menu consultation. We work with your dietary requirements, guest preferences, and event format to build a menu that fits — not a preset package forced onto the occasion.
Vegetarian, vegan, gluten-free & allergy-aware
All dietary accommodations are available with advance notice. Our kitchen team handles vegan, vegetarian, gluten-free, nut-free, shellfish-free, and other allergy protocols. No guests left without a full plate.
Updated quarterly around Colorado seasons
The Heritage Hall event menu rotates quarterly to reflect what's in season in Colorado. Spring and summer menus lean lighter; fall and winter lean richer. Your event menu will reflect the season it's served in.
Velvet Brim behind every Heritage Hall bar
All Heritage Hall beverage service is provided by Velvet Brim, our in-house bourbon bar program. Beer, wine, craft cocktails, full open bar, or guided bourbon tastings — the bar is part of the package.
Curated wine + Colorado craft beer
Thoughtfully selected wines by the bottle and approachable Colorado craft beer selections. Hosted or cash bar per guest. Bartender and glassware included.
Velvet Brim signature menu
Four to six Velvet Brim signatures plus beer and wine. Batch cocktail service available for high-volume events. Custom cocktail menu available as an add-on for themed events.
Complete bourbon bar, all spirits
The full Velvet Brim program — bourbon, craft cocktails, beer, wine, spirits, and non-alcoholic options. All bartenders, glassware, and mixers included.
Built around your brand or theme
For themed events, corporate activations, and milestone celebrations, we build a custom cocktail menu — two to six named drinks designed for the occasion, with branded menu cards available.
Velvet Brim is exclusively available through Heritage Hall packages — there is no walk-in or public bar service. All Heritage Hall events include professional bartenders for the full duration of the event.
About Velvet Brim →BBQ & casual catering for a different kind of event
For events that call for something more casual — a company picnic, a backyard-style rehearsal dinner, a summer party on the terrace — Heritage Hall can coordinate BBQ and casual catering through The Lazy Butcher, our sister concept.
The Lazy Butcher is a Colorado BBQ concept known for whole-animal smoked meats and unfussy, generous food. When your Heritage Hall event calls for something less formal — smoked brisket instead of filet, a pig roast instead of a plated dinner — we coordinate Lazy Butcher catering to bring that energy to your event.
The two concepts work well together: a Heritage Hall wedding might do a Lazy Butcher rehearsal dinner, or a corporate off-site might do Black Hat kitchen for dinner and a Lazy Butcher BBQ lunch. We coordinate both.

Whole smoked beef brisket, pulled pork shoulder, half-bird smoked chicken, and smoked sausage — sliced and served family-style or carved at a station.
Generous, house-made sides
Smoked mac & cheese, baked beans, coleslaw, cornbread, house pickles, jalapeños. Sides are built to feed a crowd — everything made in-house.
Large-format catering for big events
Whole-animal roasts available for larger Heritage Hall events. Pig roasts, whole lamb, and specialty smoked proteins available with advance booking.
Mix Black Hat & Lazy Butcher
Multi-day or multi-event bookings can combine both kitchens. A rehearsal dinner through Lazy Butcher and a Black Hat wedding dinner is a popular pairing.
